Heritage and flavours
Iranian cuisine, often called “Persian”, is built on a subtle balance of sweetness, acidity and woody or floral aromas. On the spice route, Iran incorporated saffron, cardamom, cinnamon and turmeric into preparations that celebrate meats, poultry, legumes and seasonal vegetables.
Sumac, a dried berry with a tangy flavour, brightens grills and salads; barberries (zereshk) add a sharp note to festive rice dishes; pomegranate and pomegranate molasses structure iconic sauces. Rose water and floral aromas perfume pastries, sorbets and drinks, while garlic, onion and fresh herbs (parsley, coriander, mint, dill) anchor everyday dishes in a Mediterranean freshness close to the Côte d’Azur.
Contrary to a simplistic image, the Iranian table is not overwhelmingly spicy: it pursues the doshab, the right measure, where each ingredient remains identifiable. Meals are often shared around several dishes, bread or rice, with generous hospitality: tea, dried fruits or sweets at the end. This convivial philosophy is what we wish to share with our guests in Nice.
Fundamentals
Saffron colours and perfumes rice and marinades; sumac often replaces lemon at the table; cinnamon and cardamom flavour stews and desserts. These seasonings, combined with garlic, caramelised onion and herbs, create complex flavour profiles without heaviness.
Long-grain rice, washed then steamed, is a specialty in its own right. Chelow accompanies kebabs; polo combines the grain with vegetables, dried fruits or barberries. The tahdig, the crispy golden crust, is the most coveted part of the dish.
Khoresh slowly simmer meat or poultry with vegetables, legumes and fruit sauces: herbs (ghormeh sabzi), dried apricots, pomegranate-walnut (fesenjoon), tomatoes and aubergines. Served with rice, they form the heart of family meals in Iran and in the diaspora.
